Easy Berry Cobbler

I can rationalize eating Easy Berry Cobbler because berries are loaded with antioxidants, high in dietary fiber, provide lots of nutrients like Vitamin C, Vitamin K, Potassium, Copper, Folate and Manganese, help fight inflammation which is the major cause of many diseases, may help with insulin response and improve blood sugar, include antioxidants: anthocyanins, ellagic acid & resveratrol that protect against some cancers plus they taste good!

Instructions

Preheat oven to 375 degrees. Put berries in a greased 8×8 pan and sprinkle with lemon juice. Stir together flour, sugar and egg and sprinkle over fruit. Drizzle melted butter over topping. Bake for 35 minutes or until brown and bubbling. Top with whipped cream or serve with ice cream.

 

*You can substitute gluten-free all-purpose flour to make this recipe gluten free.

1 tablespoon lemon juice

1 egg

1 cup sugar

1 cup all-purpose flour*

6 tablespoons butter, melted
