In order make home cooked meals that are affordable and quick and easy there are several steps to consider:

  1. Planning & use a grocery list to shop.
  2. Use simple ingredients.
  3. Cooking larger portion for multiple meals.

 

  1. Plan Simple Meals for the Week

Meal planning prevents impulse spending and food waste.

How to do it:

  • Pick 4–5 simple meals for the week.
  • Choose meals that use similar ingredients.
  • Cook extra so you have leftovers for lunch or another dinner.

Example weekly plan

  • Monday: Meatloaf, Sweet potatoes, Green Peas
  • Tuesday: Baked chicken, Potatoes, Broccoli
  • Wednesday: Three-Bean Chili
  • Thursday: Leftover Chili or chicken using stew chicken or leftover baked for chicken wraps
  • Friday: Omelets with vegetables

Note: Build meals around low-cost staples like rice, beans, eggs, potatoes, oats, and seasonal vegetables.

  1. Keep your Pantry Stocked with Foods that Make Cooking Easy with Affordable staples
  • Rice (brown rice more nutrients than white)
  • Pasta
  • Oats
  • Beans or lentils
  • Canned tomatoes
  • Potatoes (sweet potatoes more nutrients than white potatoes)
  • Onions & garlic
  • Eggs
  • Frozen vegetables
  • Olive oil & basic spices
  1. Double a Recipe

Batch cooking saves time and money.

Examples:

  • Cook a big pot of chili or soup
  • Roast a whole chicken
  • Make a large tray of roasted vegetables
  • Use a crockpot to stew frozen chicken breasts (I use chicken tenders) using chicken broth to keep them juicy.

Then use leftovers for:

  • Lunch bowls
  • Wraps
  • Salads
  • Soups
  1. Use Simple “One-Pan” Meals

These are easy and reduce cleanup.

  • Sheet-pan chicken + vegetables
  • Rice + vegetables + eggs stir-fry
  • Potato & vegetable skillet
  • Slow cooker soup or stew

Good shopping habits lower food costs.

✔ Buy seasonal produce
✔ Choose store brands
✔ Buy bulk staples
✔ Use frozen vegetables (cheap and nutritious)
✔ Avoid ultra-processed convenience foods

  1. Build Meals Around Real Foods

Simple whole foods are usually the cheapest and healthiest.

Good base foods:

  • Beans & lentils
  • Eggs
  • Whole grains
  • Root vegetables
  • Seasonal fruits
  • Fresh or frozen vegetables
  • Canned vegetables

 

Example $5–$7 Meal for a Family

Three Bean Chili

  • Black beans, Navy Beans, Light Red Kidney Beans
  • Frozen Corn
  • ½ pound ground beef
  • 1 jar of salsa
  • 1 large can of diced tomatoes
  • Cumin & chili powder

Cook beef → add all can goods & salsa → add frozen corn → add spices
Healthy, filling, and very inexpensive. Make 2 -3 meals.

Cook simple foods, cook larger batches, and use leftovers effectively.
