Mexican Cheeseburger

This is a very quick and easy grandkid-loving recipe my grandkids love to eat especially the college grandkids who are doing their own cooking. Included is an excellent homemade sauce recipe but full disclosure, my college grandkids, just use their own store purchased toppings like thick salsa, mayonnaise and ketchup instead of making their own sauce. If you want to lower the calories, you can use reduced fat cheese and use thick salsa instead of the sauce. You can also stack the Mexican Cheeseburgers to make a double.

Instructions

Roll hamburger into 8 balls. Put each hamburger ball onto a tortilla.  Smash down the hamburger ball into a thin burger over the tortilla. Add salt to taste. Add ½ tablespoon chopped red onion and smash down on the ground hamburger. Heat olive oil in a skillet or use a grill. Put the hamburger down with tortilla on top. Fry for about 5 minutes or until the hamburger is cooked the way you like it. Remove from skillet, and turn over. Add a slice of cheese on top of the beef. Prior to cooking hamburger, cut up green lettuce leaves and thin slice tomatoes. Add the lettuce, tomatoes on top to cooked tortilla. You can eat the cheeseburger like that or fold and eat like a taco. Spoon sauce on top of the cheeseburger tortilla. Enjoy.

Sauce for Hamburger Tortillas

3 tablespoon mayonnaise

1 tablespoon mustard

2 tablespoon ketchup

1 minced glove clove or 1 tablespoon garlic paste

1 tablespoon oregano

Mix well.

*If you use corn tortillas or gluten free tortillas. the recipe will be gluten-free. Corn tortillas easily tear so be careful.  

 

Nutritional Information Per Serving: 392 calories, 22 grams protein, 20 grams of fat,  31 grams of CHO, 3 grams dietary fiber, 530 mg sodium.

Preparation Time: 10 minutes   Cook Time: 5 minutes

8 Flour or Corn Tortillas*

1 pound lean ground beef, turkey or bison.

1 chopped medium red onion

1 tablespoon olive oil

8 slices of your favorite cheese

1 bunch of green leaf lettuce

2 fresh tomatoes

Thick salsa (optional)

Guacamole (optional)

Diced Jalapenos (optional)

 

Sauce

3 tablespoon mayonnaise

1 tablespoon mustard

2 tablespoon ketchup

1 minced glove clove or 1 tablespoon garlic paste

1 tablespoon oregano
