Quick & Easy Chicken Enchilada Casserole

This recipe is an easy-to-make recipe that my family especially my grandkids love. It can be frozen and eaten at a later date. I have a very picky granddaughter and she and her best friend had 2 big servings! That’s when I knew I had a winner to put on my website & keep making for the grandkids especially when I was grandparenting.
Instructions
Preheat oven to 350 degrees. In a large skillet, sauté onion in olive oil until tender. Combine chicken, soups, broth and Rotel. Cook until heated and bubbly. In a 9 X 13 casserole dish, make 2 layers starting with corn tortillas, chicken mixture and cheese. Bake uncovered for 30 minutes. Garnish with sour cream, homemade guacamole**, and/or thick salsa.

*How to Cook Chicken Breasts for Chicken Recipes
To poach boneless, skinless chicken breasts, place them in a large pot or skillet and add 1-2 cups of water or reduced sodium chicken broth. Bring to a boil, reduce heat, cover, and cook for 9-14 minutes until chicken reaches 160 degrees F. about 15 minutes.
You can poach in the oven. Place chicken in a single layer in a roasting pan. You can add lemon slices, peppercorns, or any other spices or herbs. Bring 4 cups of water or chicken broth to a boil and immediately pour over chicken. Cover and bake at 400 degrees F for 20-35 minutes, checking for an internal temperature of 160 degrees F.
You can also poach chicken breasts in the crockpot. Place frozen chicken breasts or chicken tenders in a crockpot. Cover with reduced sodium chicken broth. Cook on high for 3 hours or until tender.
Use poached for chicken burritos, tacos, chicken salad, etc.
Using reduced sodium chicken broth makes the chicken breasts tastier.

1 medium onion, chopped

1 pound finely shredded cheese: ½ sharp cheddar and ½ Monterey jack cheese
12 soft corn tortillas torn in pieces or 1 cup crushed Tortillas Chips/layer
